Apple Pie Oatmeal

If you haven’t noticed by now, I am a huge fan of breakfast. One of my go-to meals has always been oatmeal. It seems like such a boring food, but I never get tired of it! I have it almost every day, no matter the season. This recipe is one of my favorites, and it’s the perfect way to ease into fall.

Apple Pie Oatmeal

  • Servings: 3-4
  • Difficulty: Easy

All the goodness of apple pie in the form of a healthy, hearty breakfast.

Ingredients

    Oatmeal:
  • 2 1/2 cups water
  • 1 1/2 cups oats
  • 1/4 cup ground flax
  • A dash of salt
  • 1/4 cup brown sugar
  • 1 tsp vanilla extract
  • Apple Pie Topping:
  • 3-4 apples, peeled and diced
  • 2 Tbsp butter
  • 1/4 cup brown sugar
  • 2 Tbsp cornstarch + 1 Tbsp water
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp ground ginger

Directions

  1. Stir apple pie ingredients together in a medium bowl, excluding cornstarch mixture. Add to a saucepan and cook on medium-low, stirring occasionally, for about 15 min to soften. Stir in cornstarch mixture last to thicken.
  2. In a different saucepan, bring water and salt to a simmer over medium heat, then add oats. Stir occasionally to keep them from sticking or burning. Cook for about 5 min, reducing heat as needed to reduce the risk of burning.
  3. Once most of the liquid is absorbed and the oats are at a desired consistency, remove from heat. Stir in ground flax, brown sugar, and vanilla, then cover the oats and let them rest for 5 minutes.
  4. Top oats with apple pie topping and add nuts and/or milk of choice if desired. Enjoy!
