I first tried chia pudding a couple years ago, and I’ve been hooked ever since. It’s a little bit strange at first and may be an acquired taste/texture for some, but if you’re a fan of tapioca or rice pudding I bet you will love it as much as I do.
With only two ingredients, this recipe truly could not get any easier. It is my go-to for times when I want something chocolatey to keep on hand. Chia seeds are a great source of protein, fiber, essential fatty acids, vitamins, minerals, and antioxidants; what a list! Those nutritional benefits make this stuff suitable for breakfast, snacks, or dessert.
The toppings are the most fun part, so don’t be afraid to get creative! Some of my favorites are dark chocolate chunks, a little sea salt, chopped nuts, fresh berries, or a drizzle of almond butter. Two Ingredient Chocolate Chia Pudding
A quick and easy chocolate treat packed with protein, fiber, essential fatty acids, vitamins, minerals, and antioxidants.
- 1 cup chocolate almond milk (I prefer Almond Breeze)
- 1/4 cup chia seeds
- In a small bowl mix almond milk and chia seeds together. Once thoroughly combined, let it sit for 15 mins, then mix again to remove any clumps. Pour into an airtight container and store in the fridge for up to 5 days.
